  1. Preheat lightly oiled griddle to 300°.
  2. In large bowl, beat eggs well with whisk.
  3. Add milk and oil and whisk until bubbly and frothy.
  4. Gradually stir in flour and sugar and whisk until completely blended. Add vanilla and whisk again.
  5. Onto hot griddle, pour batter by scant 1/3 cupfuls. Cook about 1 1/2 minutes per side or until lightly browned.
  6. Serve with favorite syrup and bacon.
  7. Makes 10-12 pancakes.
