No-Chop Spicy Potato Jack Soup

  1. In a deep skillet or saucepan, saute bacon slices for 2 minutes.
  2. add potatoes and saute an additional 5 min.
  3. add chicken broth and celery salt, simmer on LOW for 5 minutes.
  4. Add pepper-jack cheese chunks, stirring until cheese is melted.
  5. Add instant potatoes a little at a time until desired thickness is reached.
  6. Remove bacon slices,
  7. add salt & pepper to taste
  8. serve with bread and butter.
