  1. Mix cubed beef with flour and brown in skillet with oil over high heat (5 min)
  2. Transfer to large pot and add bottle of wine (and port if using)
  3. Add the juniper berries, bay leaves and garlic and rosemary.
  4. Simmer over low-med heat.
  5. Chop onions, carrots and potatoes.
  6. Drizzle oil and salt over vegetables and roast in oven at 425 degrees until brown (you can also add rosemary to the roasting vegetables too)
  7. Add roasted vegetables to simmering beef.
  8. Turn down heat to min and walk away.
  9. Stir occasionally every hour and add more water if necessary.
  10. Season to taste when ready to eat (as the liquid condenses the salt will be more noticeable)
