  1. preheat oven to 350°F. Line three backing sheets with wax paper, and set aside.
  2. In medium bowl, whisk together flour, cocoa, backing powder and salt, set aside.
  3. place chopped chocolate and butter in a large heat proo bowl set over (not in) a pan of simmering water. stir until smooth and melted. removed from heat, whisk in both sugars, then eggs, until smooth.
  4. mix in dry ingrediants just until combined, do not over mix to much, fold in chocolate chips and peppermint. put plastic wrap over bowl and place in refridgerator until firm, about 30-45 minutes
  5. drop mounds of 2 tablespoons of dough on prepared sheets, about 2 inches apart.
  6. bake, rotating sheets halfway through, just until edges are firm but not burnt(about 11-13 minutes)
  7. cool on racks and enjoy.
