  1. Sprinkle gelatin over water to soften.
  2. Combine sugar, cornstarch, and salt in heavy saucepan;gradually stir in eggnog.
  3. Cook over medium heat, stirring constantly, until thickened.
  4. Cook 2 minutes longer.
  5. Remove from heat and stir in softened gelatin until dissolved.
  6. Stir in rum extract and chill.
  7. Place 1 cup of cream in clean, chilled bowl.
  8. Whip on medium-high speed till stiff.
  9. Gently fold whipped cream into gelatin mixture.
  10. Pour filling into crust.
  11. Chill until set.
  12. Place 1 cup of cream in clean, chilled bowl.
  13. Whip on high speed until cream begins to thicken.
  14. Gradually add powdered sugar, whipping until soft peaks form.
  15. Spread over pie.
  16. Chill.
