  1. run peas and onions under cold water to defrost.
  2. in a large frying pan, melt butter and add mushrooms and garlic and salt and pepper.
  3. saute until mushrooms are cooked.
  4. add flour and mix until a light brown color is on flour, about 2 minutes
  5. gradually add half and half, whisking constantly.
  6. bring to a slight boil, reduce heat to low
  7. add peas, onion and nutmeg.
  8. simmer for 5 minutes
  9. taste for salt and pepper
