  1. blend vinegar,garlic and thyme in cuisinart. Once blened add oil slowly so that it may emulsify. Once thats done pour over sliced pork and allow to sit for 30 minutes.
  2. once marinated place directly on grill over medium heat.
  3. while pork is cooking melt butter in sautee pan. Once completely melted add brown sugar and blend until it simmers. Then add apples, ginger, cherries, nutmeg and cinnamon. Allow to cook until apples are soft. once pork is cooked to proper temperature, fan medallions over any starch and top with apple compote
