  1. Brown ground beef then drain thoroughly.Add spices and tomatoes and heat through.Cover the bottom and sides of a 9x13 pan with half the tortillas.Pour all the beef mixture over the tortillas,then place another layer of tortillas over top and set aside.Combine cottage cheese,monterey jack cheese and egg together. Pour over tortillas. Bake at 350 F for 30 minutes.Remove from oven and sprinkle cheddar cheese,lettuce,tomatoes,green onions and olives over top.Serve immediately and enjoy!
