Bare Banana Cake

"This is my first, very own, from scratch recipe and I loved it. It makes a moist banana cake that's perfect warm from the oven with no icing, but even better the next day. When I do add icing, I use a caramel icing, penuche or cream cheese icing."

  1. Preheat oven to 350 degrees F. Grease 2 9-inch round pans.
  2. Peel and mash bananas with juice of 1/2 lemon and set aside.
  3. In large bowl, cream together sugar, oil, sour cream, eggs, butter, buttermilk and extract. Add mashed bananas.
  4. While wet ingredients mix, combine flour, baking soda, cinnamon and salt. Gently stir into banana mixture. Remove from mixer and stir in chopped walnuts.
  5. Spread batter evenly into pans and tap to remove air bubbles.
  6. Bake for 35 minutes on middle rack or until toothpick inserted into cake comes out clean. Remove from oven and set aside to cool.
