  1. Place frying pan on stovetop on medium-high heat.
  2. Place a tortilla on the frying pan.
  3. Spread the cheese and the diced red pepper on the tortilla evenly, covering the entire surface. Place the second tortilla over the first.
  4. Cook the underside until golden, then carefully flip and repeat.
  5. Once golden on both sides, carefully remove from frying pan and transfer to a plate.
  6. Serve immediately after cooking with a beverage. Feel free to alter the ingredients to suite your taste.
