Chicken Madeira


"This delicious and flavorful meal is one of my favorites that I concocted after one too many expensive visits to The Cheesecake may even be a little better! I prefer to serve it with mashed red potatoes and asparagus, because the leftover sauce works great as a "gravy"."

Original recipe yields 4 servings

  1. Combine mushrooms & lemon juice & set aside to marinate
  2. Brown chicken breasts in melted butter over medium heat, turning for 5 minutes.
  3. Sprinkle both sides w/salt & pepper.
  4. Add Madiera wine & roll chicken in it.
  5. Simmer 5 minutes, or until chicken is cooked (cover if necessary).
  6. Remove chicken & keep warm.
  7. Turn heat to high.
  8. Reduce mixture to 1/4 cup in pan.
  9. Add mushrooms & saute until mushroom juices evaporate.
  10. Add cream & boil until sauce is thickened & reduced stirring often.
  11. Add chicken back and simmer.
  12. Sprinkle w/cheese & cover until cheese is melted.
