"I found this recipe in a old book of my mother's and I love it! My husband isn't a big veggie eater, however, he too loves it! Its a nice combination of sweet and salty!"

  1. Heat oven to 350.
  2. Heat 2 Tablespoons of butter, carrots, and onion (And salt & pepper, if desired) in a medium saucepan, until carrots are tender.
  3. Add flour and sugar, stir constantly until bubbly.
  4. Add milk, again stirring constantly, boiling for 1 minute. Remove from heat.
  5. Add cheese and mix well.
  6. Pour into a ungreased 1 quart casserole dish.
  7. Crush cereal in a small bowl and stir in remaining 1 Tablespoon of butter.
  8. Sprinkle over carrot mixture and bake uncovered for 30 - 45 minutes, or until brown and bubbly.
