  1. Slice the bread thickly and put to soak in a basin of water.
  2. Finely slice the onion and tomatoes.(Some versions of panzanella also have cucumber, which you can add if you like.)
  3. Add 2 handfuls of chopped basil to the vegetables.
  4. Squeeze the bread dry. This is the most important part. The bread must be well squeezed.
  5. Add the bread to the vegetables, plus olive oil, salt, and pepper.
  6. Stir to combine all ingredients thoroughly.
