  • Prep

  1. melt coverture and then cool.
  2. Beat cream until thick, fold into chocolate. Add egg yolks and brandy, folded until combined.
  3. Beat egg whites until firm peakes form. Fold into chocolate mixture. Spoon into individual serving dishes, refrigereate until firm.
  4. Decorate with shaved dark cooking chocolate.
