  1. Cut cucucmber in half lengthwise and scoop out seeds.
  2. You may peel the cuke if you wish
  3. Slice cucumber into bite size pieces
  4. Cut chili pepper lengthwise and scoop out seeds
  5. Mince, Add to cucumber.
  6. Slice red onion into paper thin slices, add to cucumber
  7. Chop mint leaves
  8. Squeeze lime juice over the cucumber add sugar
  9. Drizzle oil and add sugar , salt and pepper to taste.
  10. Refridgerate for one hour
