  1. In a pot add the first 8 ingredients and bring to a boil.
  2. Turn down to medium and let slow boil for approx 1hr until the peas/beans are soft.
  3. Add washed rice to casserole dish and pour on water/peas mixture.
  4. Mix water/peas with rice making sure you have enough liquid for the rice to absorb with out getting dry. (add more water if necessary)
  5. Add lid and put in the oven on 375deg for approx 20-30 mins or until all liquid has been absorbed and rice is soft. Checking and stiring often.
