  1. Wash and chop the beet greens, including stems, coarsely.
  2. Remove outer leaves from iceberg lettuce, if necessary, and coarsely chop.
  3. Melt butter in skillet over medium heat.
  4. Add greens all at once and saute until wilted, about 6-7 minutes.
  5. Season with salt and pepper to taste.
