Lactose-free Low-Fat Soymilk Blueberry Molasses Bran Muffins

"Searching for the perfect bran muffin, I combined several recipes for the healthiest result. I am lactose intolerant so this recipe contains no milk or butter, however substitutes with applesauce and soymilk. You can’t tell they are healthy!"

  1. Preheat oven to 375 degrees F. Use Silicon non-stick Muffin Pans.
  2. In large bowl combine applesauce, egg, brown sugar, molasses and flavoring.
  3. Combine soymilk and bran. Add to wet ingredients. Set aside.
  4. In separate bowl shift whole wheat flour, rolled oats, baking soda, baking powder, and salt. Add to wet ingredients, mixing lightly.
  5. Gently mix in blueberries or raisins.
  6. Fill muffin cups to top.
  7. Bake for 25 minutes, check with toothpick, if it comes out clean they are ready.
  8. Enjoy!
