Italian Casserole - Southern Style


"This is a great, easy Italian casserole - made "Southern Style" with biscuits, instead of pasta. Variations of the recipe can be made by changing the mixed veggies and the cheese used (i.e.: cauliflower and cheddar cheese)."

  1. Preheat oven to 350 degrees.
  2. Grease a 9 x 13 baking pan.
  3. Cook ground beef, onion and garlic, seasoned with pepper and seasoned salt over medium-high heat until no longer pink.
  4. Drain excess grease and return to heat.
  5. Add tomato sauce, tomato paste, water, and Italian seasoning stirring until well blended. Simmer uncovered 10 minutes.
  6. Mix in frozen vegetables and half of the cheese. Pour immediately into baking dish and spread to cover bottom completely.
  7. Lay biscuits on a flat, clean surface and cut in half so that you have "half circles". Placing cut side down, arrange around the outside of the dish.
  8. Add remaining cheese in the middle.
  9. Bake 20 minutes or until biscuits are golden brown.
