  1. Peel plaintains and cut into one inch chunks.
  2. Soak for 15 minutes in salted water.
  3. Drain well.
  4. Heat the oil, or deep fryer. Add plantain slices and fry for 15 minutes (they shouldn't brown)
  5. Drain on a rack or kitchen roll
  6. Crush the garlic and salt together, adding the olive oil to the mixture to smooth
  7. Crush a portion of the fried plaintains and pork rinds.
  8. Add some of the garlic and olive oil mixture and keep combining
  9. Spoon the mixture and shape into two inch balls.
  10. Repeat until all the ingredients are used.
  11. Keep warm in a 350 oven until ready to serve
  12. Optional: Spoon beef broth over top to keep it juicy.
