  1. Rinse and pat dry chicken.
  2. Thinly slice chicken into 2 inch strips.
  3. Clean and peel potatoes, cut into 1 inch cubes.
  4. In a saucepan heat oil and curry paste on high heat until curry bubbles stirring frequently.
  5. Add chicken, potatoes, coconut milk, fish sauce, brown sugar and chile peppers; stir well and cook for about seven minutes or until chicken is done through.
  6. Serve immediately over rice.
