  1. Preheat oven to 375oF (180oC) and grease a 13x9 inch tray.
  2. Mix the oats, flour, coconut, fruit, sugar and cinnamon in a large bowl and stir well.
  3. Combine syrup, honey and butter in a microwave safe bowl and heat for 2 minutes on high until butter is melted and becomes thin liquid.
  4. Add in the boiling water and bicarb and stir, it will froth and almost double in size.
  5. Add in the liquid to the dry ingredients and mix to combine.
  6. Pour into the prepared pan and using a wet hand, press into the pan evenly.
  7. Bake in preheated oven for 15-20 mintes until evenly golden.
  8. Cool in tin and slice into 16 bars.
  9. Note - do not add choc chips to this recipe, they make the mix too wet and it won't set. Instead melt chocolate and drizzle decoratively over the slab before slicing.
