  1. Prepare the mashed potatoes. Instant is fine.
  2. Mix potatoes, coconut, sugar, walnuts, almond extract.
  3. Roll into balls, about a tablespoon size.
  4. Place balls on a wax paper covered cookie sheet.
  5. Chill in refrigerator for 1 hour.
  6. Just before taking the balls out of the refrigerator, prepare the chocolate coating.
  7. In a double boiler, melt chocolate and wax, stirring frequently.
  8. Take out balls, dip in chocolate, and chill in refrigerator until chocolate is dry.
