  1. Mix sugar, egg, butter and vanilla.
  2. Add remaining ingredients, except strawberries, mixing well by hand or with electric mixer on medium speed.
  3. Grease and flour tube cake pan. Pour in half of batter, then strawberries, then the rest of batter(or lightly mix strawberries into the batter before you pour it in the pan).
  4. Sprinkle on the coconut.
  5. Bake for 45 min @ 350 degrees or until toothpick comes out clean.
  6. Serve plain, with whipped cream or even with milk poured over it.
