  1. In an small mixing bowl, mix the lemon juice with half of the Olive Oil and add the Ginger (or the Garlic).
  2. Remove skin and fat from the Chicken breasts with a sharp knife.
  3. Place the second half of the Olive Oil in a pre-heated heavy skillet.
  4. Add Chicken breasts to the skillet and cook on medium-high heat for about three minutes.
  5. Add the mixture of Olive Oil, Lemon, and Ginger to the chicken.
  6. Reduce heat to medium-low until the chicken is ready to your likeness
  7. Once is done, remove the chicken and serve on a warmed platter.
  8. Garnish with parsley and lemon zest.
