"This is a variation of my older sister's traditional mexican rice recipe. I've spiced it up a little and added a few of my own ingredients to suit my taste. This is a very versatile recipe and can be modified to suit anybody's tastes."

  1. Heat skillet with oil.
  2. Saute rice in oil with desired spice until rice turns opaque.
  3. Add 1 1/2 Cup water, bouillon cubes and tomato sauce.
  4. Stir to incorporate ingredients and to make sure bouillon cubes are dissolved completely.
  5. Put lid on and let simmer on medium heat until liquid is dissolved.
  6. Add remaining 1/2 water stir well.
  7. Put lid back on and simmer until liquid is absorbed.
  8. Once rice is cooked through add green chiles and cheese and let warm through.
  9. Serve alongside favorite mexican dish or take as potluck dish.
