  1. Add rice to 2 cups of boiling water.
  2. Add garlic and onions to heated oil in wok and stir until onions are clear.
  3. Add bite-sized pieces of tofu and continue stirring.
  4. Combine all vegetables except tomato and add to mix.
  5. Pour soy sauce into pan and add some salt and crushed pepper
  6. Continue to cook and stir until veggies are tender.
  7. Place rice mixture into wok and mix ingredients.
  8. Add tomatoes and black pepper, and then remove from heat.
