  1. Cut avocado in half and remove seed, cut pulp into squares and remove from skin using a spoon. Put into serving dish.
  2. Coat diced avocado with lime juice to prevent oxidation.
  3. Seed and dice the tomato and add to avocado.
  4. Dice onion and add to avocado mixture.
  5. Mince garlic and crush with course salt to make a paste. Add to mixture.
  6. Crack fresh pepper into mixture and stir.
  7. Refrigerate for at least 30 minutes before serving.
