  1. In a large heavy pot, cook the apples and orange juice over medium heat - stirring frequently until the apples start to become soft.
  2. Next, add in the white sugar, brown sugar, lemon and orange zest, lemon juice, cinnamon, and nutmeg. Continue to cook over a medium heat - uncovered, until the apples are tender and chunky.
  3. More sugar and cinnamon may be added to acquire your desired taste. Serve warm or chilled.
