  1. Saute chicken breast halves in a little olive oil, seasoned with 1tsp herbs de provence, until golden brown and cooked.
  2. Remove to a plate
  3. Pour oil out of pan
  4. Over high heat, add white wine and vinager, scrapping the pan and reducing the liquid until thick and syrupy.
  5. Add the cream and boil vigorously, continuously scraping the pan with a woodend spoon until cream is thick and reduced by 1/2 its original volume. Remove from heat.
  6. Stir in the mustard and spoon over chicken.
