"This sauce can be made while your pasta is cooking. Legend suggests that Italian ladies-of-the-evening would prepare this when they were between "appointments". Add some slivered sun-dried tomatoes for extra flavor. It's also great as a topping for chicken or fish."

  1. Heat olive oil in a large skillet over medium heat.
  2. Saute garlic until fragrant, about 30 seconds.
  3. Add tomatoes and bring to a simmer.
  4. Stir in olives, capers, anchovies, parsley, salt, red pepper flakes and oregano. Cook, stirring frequently, until bubbling, about 3-4 minutes. Add some reserved tomato juice if a thinner sauce is desired. Taste and adjust seasoning (the sauce should be a bit spicy).
  5. Toss with cooked pasta and sprinkle Parmesan cheese on top.
