Oven Braised Brisket

  1. Preheat oven 350 degrees
  2. Place oil in large skillet and saute sliced onions over medium heat until golden brown.
  3. Transfer onions to large roasting pan. Add sliced carrots and sweet potato. Top with brisket, fat side up.
  4. Combine remaining ingredients and pour over brisket.
  5. Cover and bake for 2 1/2 - 3 hours or until tender.
  6. Remove from pan and let cool 1/2 hour. Slice thinly.
  7. Skim fat from gravy. Puree vegetable and add back to gravy until desired consistancy.
  8. Pour gravy over meat, lifting slices to get gravy in between slices.
  9. Cover and refrigerate overnight.
  10. Reheat to simmer in oven before serving.
