Smashed potatoes


"These are my mother's smashed potatoes. They have been a staple in our family for years. We used to call them "holiday potatoes," but now I make them all the time because they are so good! These can even be made ahead of time and reheated in the oven at the last minute."

  1. Boil potatoes in a large pot for 15-20 minutes or until done. Drain.
  2. Put potatoes in a mixing bowl and mix on low setting until potatoes are smashed.
  3. Add cream cheese and sour cream to potatoes and mix on medium for 2 minutes.
  4. Add butter, salt and pepper. Whip potatoes for 3 - 5 minutes until light and fluffy.
  5. Serve immediately.
