  1. Saute onion in olive oil.
  2. Add water, bullion cubes, beans, salt and pepper, cook for 30 minutes.
  3. Add escarole and cook for 30 minutes.
  4. Add garlic, cook for 5-10 minutes.
  5. Serve with Italian bread and parmesean cheese.
