  1. Cook brown rice until nearly done.
  2. In a separate pan, heat oil. Saute garlic and jalapenos for one minutes.
  3. Add onions and green peppers, and saute for another five minutes.
  4. Drain beans, and add to pan.
  5. add 1 tsp. ground cumin, 0.5 tsp ground coriander, red chilli powder, salt and black pepper to taste.
  6. cook for three to four minutes. Add rice and mix in well.
  7. Stir in coconut milk and simmer for two to three minutes.
  8. Add chopped chilantro and lime juice.
  9. Serve with sliced avocado on the side.
