Crust: Preheat oven to 350º. Mix together all crust ingredients until thoroughly mixed. Press into bottom of 13" x 9" x2" pan. Bake 15 minutes. Cool.
Filling: Beat sugar & cream cheese until smooth. Beat in eggs until mix is fluffy. In a small cup, dissolve coffee granules in vanilla extract; beat into cheese mixture until well blended. Pour into crust and return to preheated oven for 20 minutes or until set. Remove from oven & spread on the topping.
Topping: Gently stir together all topping ingredients until blended. Spread on hot cheesecake and return to oven; bake for 5 minutes. Cool & chill. Cut & serve when completely chilled.
