  1. Place ham in a large pan and cover with cider.
  2. Leave in cold place to soak overnight.
  3. Add the peppercorns and bay leaf and bring to the boil.
  4. Skim the surface and reduce the heat.
  5. Simmer for 1/2 hour per pound.
  6. If the joint is smaller, simmer for 20 minutes per pound.
  7. Preheat the oven to 220 degree C.
  8. Remove the joint from the pan, carefully peel off the skin and mark diamond shapes into the fat with a sharp knife.
  9. Stand the ham in a roasting tin with a small amount of the cider to cover the bottom of the tin.
  10. Mix the sugar and mustard.
  11. Spread this over the fat on the ham.
  12. Press a clove into the corner of each diamond shape.
  13. Roast the ham in the oven for 20 to 30 minutes until the fat is crisp and golden.
  14. Remove and allow to cool before carving.
