Picky Toddler Vegetable Muffins


"My 18 month old son spits out any vegetable we try to serve him the "old fashioned way" so I came up with a vegetable muffin recipe that is packed full of veggies that he loves to eat! They are dense, moist muffins that are not full of sugar or fat. Applesauce,yogurt and flaxseed (optional) add extra nutrition."

  1. Mix all dry ingredients in one bowl including pumpkin seeds.
  2. Cream butter with sugar, honey and vanilla. Add eggs. Beat till blended. Add yogurt and applesauce. Mix with a spoon. Add vegetables. Mix again. Add dry ingredients and mix again.
  3. Fill paper muffin cups in muffin tins 3/4 full.
  4. Bake at 350 degrees for approximately 25 - 35 minutes, depending on size of muffin.
