Bleu Cheese Creamed Spinach


"This is a great dish for bleu cheese fans. Sherry, nutmeg and cayenne pepper add depth of flavor. Serve directly from the stove or bake at 350 degrees for 20 minutes in a 1-1/2 quart casserole. Top with crushed french fried onion rings for last 5 minutes of baking time."

  1. Melt butter in saucepan over medium heat.
  2. Add onion and saute until limp, about 3 minutes, stirring often.
  3. Add garlic and cook until fragrant, about 1 minute, stirring often.
  4. Add flour and cook, whisking constantly until bubbly, about 2 minutes.
  5. Add milk or half and half and whisk constantly until thickened, about 4-5 minutes.
  6. Whisk in salt, cayenne pepper, nutmeg and Sherry.
  7. Stir in bleu cheese and whisk until melted. Taste and adjust seasoning if necessary.
  8. Stir in spinach and blend well. Cook over low heat, stirring constantly, until spinach is heated through and mixture is bubbly.
