  1. Crush biscuits and add melted butter, press mixture into the base and sides of a 9" loose bottomed flan tin.
  2. Mix egg yolks and condensed milk together till well blended, add the zest and lime juice and mix well.
  3. Pour into pie base and bake at 350f for 15 mins.
  4. Let cool completely then cover with clingfilm/saran wrap and refrigerate overnight.
  5. Whip cream and vanilla sugar till stiff peaks just form, don't over mix. pipe little rosettes all around the top of pie till covered or just add a dollop on top each slice when serving.
