  1. In a saucepan melt the butter.
  2. Wilt down the spinach and add the ricotta.
  3. Prepare the filo using two sheets ontop of each other for each parcel.
  4. Divide the mixture between the four sheets placing the mixture in the centre.
  5. Fold the filo over the ricotta and spinach making a parcel.
  6. Beat the egg with a little water and eggwash the pastry.
  7. Bake in the oven for 10-15mins at 180-200C
