"Many people think that they have the best recipe for corn muffins. They haven't tried these! Definitely not dietetic but worth every calorie. This recipe can also be prepared in a 9" square pan. Increase baking time to 25 minutes."

  1. Preheat oven to 400 degrees.
  2. In a medium bowl combine corn meal, flour, baking powder, salt and sugar. Whisk to blend.
  3. Combine heavy cream, egg and melted butter in a small bowl. Whisk to blend and pour over dry ingredients. Stir only to moisten. Fold in corn kernels.
  4. Divide batter evenly between 12 paper-lined muffin cups. Bake in preheated oven 15-20 minutes until golden. Serve warm.
