Jean's Vegetarian Beefy Mac and Cheese

"During my vegetarian kick, I discovered "fake" ground beef and found it to be quite delicious! I had a craving for beefy mac and cheese and this is the recipe I came up with. You may use ground beef or turkey instead of the vegetarian "ground beef." The vegetarian version has the same great taste without the fat and the greasy aftertaste."

  1. Preheat oven to 350.
  2. Cook elbow macaroni according to directions. Drain, set aside.
  3. Sauteed onions, red & green peppers in 3 Tbs of olive oil in a deep, large skillet. Season with salt. Remove from pan after 5 mins into a dish. Place aside.
  4. In the same pan, sautee "beef" with remaining 3 Tbs of olive oil. Season with italian seasoning, garlic powder, Mrs. Dash, cayenne pepper and salt&pepper.
  5. Add 1 can of Italian crushed tomatoes. Stir. Taste and add more seasonings if desired. Remove from heat and add in 1 cup of cheddar cheese.
  6. Carefully place in a 9x13 glass pan, lightly sprayed with cooking spray. Add remaining cheddar cheese.
  7. Bake for 30 mins.
