"This is my favorite chicken recipe. Everyone who's had it loves it. You could use any type of veggies you had around the house and you could use only breast pieces or I've even made it with just leg pieces. It's really a versatile recipe."

  1. Preheat oven to 375.
  2. Place all veggies in a large baking dish.
  3. Toss with olive oil and season with salt, pepper and garlic to taste.
  4. Rinse chicken pieces with water and arrange on top of veggies.
  5. Season chicken with salt, pepper, garlic and sage.
  6. Cover tightly with tin foil and bake for 1 and a half hours or until chicken juices run clear.
  7. Remove foil for last 10 min of cooking to brown chicken.
