  1. -dice the shitake mushrooms and saute with spinash and flambe wtih brandy, remove from stove top and mix with mascarpone cheese.
  2. -cut a small slit in the chicken where the bone meets the breast, big enough to fit two fingers.
  3. -stuff the stuffing in the slit and rub the cumin and paprika all over the breast, then wrap the breast in the cul fat. season with salt and pepper.
  4. -sear the breast in butter until golden brown on both sides and place in a 350 degree oven for approximately 12 min. remove from oven and let rest, then on a bias slice the chicken breast into 3 equal slices and serve.
