In a food processor, combine the sun-dried tomatoes,cashews,garlic, and 1/4 cup olive oil.
Blend ingredients together, slowly drizzling in more olive oil as needed.
Make sure you blend the mixture thouroughly; this could take 3- 5 minutes.
When the pesto reaches the consistenty you like (some people may like a more softer, onctuous pesto, others may like it with less oil. Also, keep in mind that you can always add more oil as needed when using the pesto in various recipes.)
Season to taste with salt and pepper.
Blend again for 1-2 minutes to incorporate the seasoning.
