"Here is my recipe for the perfect sushi rice. You can eat this alone or roll into your favorite "California Rolls" with ingredients of choice. I use strips of carrots and cucumbers and slices of avocado."
Place and rice and water in medium sized saucepan or rice cooker. If cooking in saucepan cook on high until the water boils. Cover saucepan (do not peek)and lower heat to simmer for about 20 minutes until water is absorbed. Let rice cool until warm enough to handle.
Combine the rest of the ingredients in a small saucepan. Simmer until sugar dissolves. Cool completely before combining over hot cooked rice. When combining the vinegar mixture to the hot rice, the rice will be very wet. Don't worry about this, keep stirring and it will "dry" as the rice cools. You may have to experiment with the rice proportion to vinegar mixture depending on taste.
Use this as a basis for nori rolls or just roll them into small pieces with the desired toppings of choice.
