  1. 1. Preheat oven to 350 degrees. Spray muffin tins with non-stick spray, or line with paper cups.
  2. 2. Mix oatmeal, baking powder, cranberries, and brown sugar in medium bowl.
  3. 3. In small bowl, combine milk, vanilla extract, applesauce, and egg. Beat lightly with fork to combine.
  4. 4. Pour wet mix into dry mix, fold together until well mixed.
  5. 5. Pour into prepared muffin cups, fill to almost full, these don't rise much.
  6. 6. Bake at 350 degrees for 35 to 40 minutes, until golden brown.
