"this granola is awesome for breakfast, or on top of vanilla ice cream. i've been making this recipe for years and it's a favorite in our house (and amongst our friends!). I find it impossible to keep this granola crunchy in the summer months (when it's very humid), so i make it every season except that one."
Preheat oven to 300 degrees (F). In a medium sized bowl microwave oil and honey together for 1-2 minutes then set aside. In a huge bowl combine oats, sunflower seeds, almonds and cinnamon. Pour the warm oil/honey into the dry ingredients and start stirring with a wooden spoon so that everything is evenly coated with the honey/oil (this usually takes a couple of minutes). Spread this mixture into the roasting pans so that it is 1-1.5 inches deep. Place pans in oven for 20 min, then take out and stir around, and place back in the oven for 20 more min. The granola should look golden brown. Take it out and spread the granola out onto newspaper so that it's no thicker than 2 inches, let it dry this way overnight (until cool to touch). The next morning add the dried fruit and store in tupperware or zip-lock bags, voila!
