Unwrap cream cheese and place into a large glass mixing bowl. Using a heavy duty wooden spoon "mush" around the cheese until it becomes creamier.
Add the dried beef, onion tops, and sauces. Stir with spoon, folding often until well combined. Add three quarters of the cheddar cheese and fold into the mixture until combined. Cut mix in half and fold out onto a piece of plastic wrap. Pull corners of wrap up around sides, and twist together on top to conform ball. Do this to each half. Refrigerate for about an hour. Then remove wrap and roll in remaining cheese. Viola! Serve with a variety of delectable crackers and enjoy.
